I grew up with a great-grandmother who was a chef and culinary professor, thus I am remissed to say I'm most definitely not a cooking enthusiast. Recently I've been embracing more vegetarian options and I was surprised to report to my great-grandmother that I'm actually enjoying this healthy food cooking journey. I mean I've never really ate horribly, always been a soup, sammie, or salad kind of gal. Only now I'm consciously incorporating loads of produce and antioxidants into my diet. I'm better at preparing vegetarian and vegan meals much more than I was ever skilled at cooking meat. Many of you have experienced my "rare" disasters lol.
All that to say I was so proud to try a bean burger recipe. I'm a total Pinterest addict, so of course I found some pretty juicy recipes to pin. For me, not eating meat means I can never hoard too many jars and cans of beans at this point, so I settled on a black bean burger recipe. Then I thought "why does black bean burgers have to mean black beans?" I really want to find ways to incorporate all the different types of beans I like. I decided to substitute the black beans with garbanzo beans and I was good to go. Topped it off with home made guacamole and baked plantain fries, then I washed it down with green juice.
The meal was simple to prepare and absolutely deeeelish. Head over to Catchingseeds.com and my favorite vegan cook Chef Ahki and try these recipes out tonight. Xo pB
